We all know that fall means one thing…PUMPKIN! We also know that during treatment you may find it difficult to eat enough calories and protein every day. These no-bake energy bites are a great high-calorie and high-protein snack that can be prepared in minutes. Swap out ingredients to make this recipe your own!

Yields: 25 bites

Ingredients:

2 cups oats

½ cup canned pumpkin puree

¼ cup almond or peanut butter

¼ cup chia seeds

¼ pumpkin seeds

1 tsp vanilla extract

½ tsp cinnamon

½ cup honey

Pinch of salt

½ cup chocolate chips

Mix all ingredients in a large bowl until well-blended (tip: using a food processor will create a smoother texture). Scoop mixture and form 25 balls. Freeze until solid. Can be stored in the freezer or refrigerator.

Nutrition facts (per energy bite): 80 calories, 2 g protein, 1.8 g fiber, 12 g carbohydrate

Recommended serving size: 3 bites (240 kcals, 6 g protein, 5.4 g fiber, 36 g carbohydrate)
