Ingredients: 

Serves 4

4  1-ounce slices Halibut
½  teaspoon garlic, chopped
1   teaspoon red onion, chopped
2   teaspoons red peppers, chopped
2   teaspoons yellow peppers, chopped
½  cup canned tomato sauce
1   teaspoon salt
1   teaspoon pepper
¼  teaspoon cayenne pepper
1   teaspoon lemon juice
4   teaspoons Extra Virgin Olive Oil
2   teaspoons cilantro leaves, chopped
4   soft spinach or sundried tomatoes taco shells

Directions:

Season halibut with salt, lemon juice and cayenne pepper. Pan fry halibut in EVOO for three minutes each side in a covered hot skillet and set aside. In the same pan, add oil and warm. Stir fry garlic, onions and peppers for three minutes. Add tomato sauce to the mixture. Season with salt and pepper, and let simmer for ten minutes. Stuff each taco with the pan-fried halibut fillet. Add the sauce prior to serving. Garnish with chopped cilantro.
